Vegetable Rice bath and Raitha.

Ingredients:

  • Potato 1-2
  • Carrot 1
  • Beans 10
  • Green peas 1 cup
  • Other spices:
    Onion 1
  • Garlic 4-5 cloves
  • Ginger small piece
  • Coconut 1 hand full
  • Green chilly 1-2
  • Bay leaves 2-3
  • Rice 1 cup
  • Coriander leaves
  • Curry leaves
  • Cashew nuts 3-4
  • Cardamom 3
  • Cinnamon 1 small piece
  • Ghee 7-8 spoons
  • Turmeric

Ricebath

Method

  • In a cooker put 3-4 spoons of ghee and heat it.
  • Add cardamom, cinnamon, cashew nut and fry it for 20-30 seconds.
  • Now add chopped garlic, chopped onion, and chopped green chilly, turmeric and curry leaves and fry it until onions become transparent.
  • Put this mixture to a mixer; add coriander leaves and coconut and grind it to fine paste.
  • Now in a cooker put 4-5 spoons of ghee and put chopped vegetables mentioned above and fry it for about 1 minute.
  • Add 1 cup of rice to it and fry it for 30 seconds.
  • Now add the masala paste we prepared earlier and mix it well.
  • Add 2 cups of water [water may vary according to rice type and quantity], add 1-2 bay leaves, put salt and mix it well.
  • You can also add any of garam masala powder you have.
  • And close the cooker and pressure cook it for 13 minutes. [Time may vary according to rice type] and Vegetable Rice bath will be ready.

Raitha:

Ingredients:

  • Tomato 1
  • Onion 1
  • Green chilly 1
  • Curd 3 cups
  • Mustard ¼ tea spoon
  • Coconut 2 spoon
  • Coriander leaves

Method

  • Finely Grind mustard, coconut and curd; Add finely Chopped tomato, onion and green chilly to it.

  • Add Salt according to taste. Add finely chopped coriander leaves and raitha is ready.
