Eggs are very nutritious. Pair them with some veggie and a wholesome meal is ready.

Egg Burji SaladThe crunchy vegetables and tasty eggs are a combination not be missed. Use vegetables of your choice, lightly toss them and mix with scrambled eggs. I have not used any salad dressing here, but you are free to use one. I have seasoned the veggies with salt and pepper and drizzled with oil. Off course, you are welcome to use olive oil.

Ingredients
  1. Eggs 2
  2. Capsicum 1
  3. Spring Onion 1/2 cup finely chopped
  4. Carrot 1
  5. Cabbage 1/2
  6. Green Chillies 2
  7. Black Pepper powder 1/2 tsp
  8. Cherry tomatoes 3
  9. Salt
  10. Oil
Instructions
  1. Chop all the veggies to desired size.
  2. Heat oil in a pan .
  3. Put all the veggies in the pan and lightly toss them on med-high flame.
  4. When the veggies start browning, remove them to a plate.
  5. Heat oil in same pan.
  6. Break 2 eggs in a bowl. Add a pinch of salt, pepper/chilli flakes/finely chopped green chillies and beat well.
  7. Pour the egg mixture into the pan and scramble it. Cook eggs till done, on medium flame, around 2-3 minutes.
  8. In a large bowl, mix together roasted veggies and scrambled eggs.
  9. Garnish it wit Cherry tomatoes and Cucumber
