A quick starter dish made absolutely in no time and finished in no time as well.
All you need is handful of ingredients readily available in your kitchen counter and you are good to start. I sourced this recipe from a cookery show aired on a Malayalam channel and the recipe used chicken. I twisted it and threw in paneer instead of chicken and it tasted delicious.
Paneer is marinated with curds and spices and cooked together. Yes this is a one liner description of the recipe. You could marinate the paneer as long as you wish, this is the only step that would be time consuming as cooking would take you 20 more minutes. Okay!! lets get started.

Ingredients

  • Paneer/cottage cheese-100 gm cubed/diced
  • Curd-100 ml
  • Turmeric powder-1 tbsp
  • Coriander powder-1tbsp
  • Red chilli powder-2 tbsp
  • Salt
  • Oil-1tbsp
  • Curry leaves-few
  • Coriander leaves

Method

  • Marinate Paneer in curd, dry powders and salt. Set it aside for at least 30 minutes.
  • In a pan, heat oil and fry curry leaves.
  • Add marinated paneer and cook for 2-3 minutes on medium flame with the pan closed.
  • After 3 minutes you will see that curd by now has come to a watery consistency.
  • Add half a bunch of chopped coriander leaves. Let the spices blend well. adjust salt if required.
  • Now, continue to cook on high flame with the lid open and let the gravy evaporate.
  • When the gravy sticks to paneer and is dry you may put off the flame.
  • Garnish with chopped coriander leaves and onion rings while you serve.
  • Note

    • Use a non stick pan to avoid paneer sticking to the bottom.
    • While using non stick pan you could omit the oil, there by making it guilt free.
    • If you are a non vegetarian you could substitute chicken for paneer.
