When you want to give your regular saru/rasam a twist then do try this. I have a simple recipe shared by Nithin. He is an integral part of TIF to keep it up and running. Unlike a regular rasam you cannot prepare this rasam quickly. It involves cooking beetroot and blending it. So, if you are not in a hurry then definitely try this option of saru/rasam.
Beetroot is a natural sweetener. It gives a different flavour to the regular rasam and finishing it with garlic tadka will add a special aroma. You can use homemade or store brought rasam powder in this preparation. The recipe uses potato, but its optional. It does nothing to the taste of the dish but will thicken the saru. Entirely optional. Beetroot, rasam powder, and garlic tadka are the main ingredients of the recipe.

- 1.Beetroot 1 small
- 2.Potato small piece (optional)
- 3.Onion puree 1 tbsp
- 4.Tamarind pulp 2 tsp
- 5.Mustard seeds 1 tsp
- 6.Rasam powder 1 tsp
- 7.Turmeric powder 1 tsp
- 8.Curry leaves 1 strand
- 9.Salt to taste
- 10.Oil/ghee 2 tsp
- For tempering
- 11.Ghee/oil 2-3 tsp
- 12.Garlic 2 pods chopped
- 13.Asafoetida 1 pinch
- Wash, peel and cut beetroot and potato into medium sized cubes.
- Pressure cook beet and potato for 2 whistles. Let it cool.
- Puree half a onion with little water.
- Blend together beetroot, potato and Rasam powder. Do not add water.
- In a sauce pan heat oil on a medium flame.
- Add mustard seeds and let it splutter. Add curry leaves.
- Mix in onion past and fry till fragrant.
- Add tamarind pulp, turmeric powder and salt. Mix well.
- Add beetroot puree and 2 cups water. Let it boil.
- Adjust water and salt. Bring it to boil
- Finish it with garlic tadka/tempering.
- To make onion puree, blend 1 small onion with little water in a mixer.
- You can puree onion along with beetroot and potato and use in the preparation.
- Like potato, using onion or onion puree is completely optional.
- Yo can also use carrot along with beetroot.
