Come august and my humble website completes 4 years. It was on this Independence Day in 2013 we kick-started with the Tiranga Recipe. Since then, this little space has come a long way posting easy recipes to ease foodies life. Today, We repeat a Tri colour recipe with pasta.

Pasta here is cooked in 3 different sauces – arrabiata sauce, cream and spinach/palak. Yes, I was thinking of a pesto sauce, but could not get hold of pine nuts (that was essentially needed in pesto sauce.) on time. I did not want to drop my idea and chose spinach instead. Spinach pasta has been tried and tested in my kitchen like – a zillion times. Including spinach in pasta is my cheat code to healthy eating 😛

Arrabiata sauce was a super hit this time and it was my first time in making. The tanginess and creaminess was well balanced in the pasta. Well, I was spoilt for choices this time – with 3 bowl of delicious pasta in front of me. OK, stories apart let us make some great tasting pasta today. Also, please bear with the lengthy recipe as it covers 2 pasta variants. Happy cooking!

Tri Colour Pasta

Ingredients
  1. Penne pasta (any variant will do) 250gm
  2. Fresh cream 100ml
  3. Butter 3 tbsp
  4. Garlic 5-6 cloves pealed and finely chopped
  5. Onion 1 finely chopped
  6. Tomato 2(small)
  7. Black Pepper powder 1/4 tsp
  8. Mint leaves finely chopped 1tbsp
  9. Chilli flakes 1/2 tsp
  10. Oregano 1/4 tsp
  11. Green chilly 2 finely chopped
  12. Spinach 2 hand full
  13. Salt to taste
Method
  1. Boil 2 cups of water with 2tsp of salt. Add pasta and let it cook for 10-12 minutes . Once cooked divide pasta into 3 equal portions and keep it aside.
  2. Boil 2 cups of water and blanch tomatoes fro 4-5 minutes and peel the skin. Let it cool. Once cooled make fine tomato puree.
  3. Similarly blanch spinach leaves in hot water and make fine puree and keep it aside.
Pasta with Arrabiata sauce ( Orange colour)
  1. In a pan fry 1 tsp of butter on medium flame.
  2. Add finely chopped garlic,green chilly.
  3. Add the onions and sauté till it becomes transparent.Fry till its aromatic.
  4. Add tomato puree and fry it for 2-3 minutes.
  5. Add salt ,chilli flakes,oregano and pepper powder. Sauté for 2-3 minutes
  6. Add fresh cream and mix well. Add water if you feel the sauce is thick for you. Do not add more than 2-3 tbsp.
  7. Add cooked pasta and toss till the pasta is coated with sauce.
  8. Keep it on medium flame for 2 more minutes and put off the flame.
Pasta with Spinach sauce ( Green colour)
  1. In a pan fry 1 tsp of butter on medium flame.
  2. Add finely chopped garlic,green chilly.
  3. Add the onions and sauté till it becomes transparent.Fry till its aromatic.
  4. Add spinach puree and fry it for 2-3 minutes.
  5. Add salt ,chilli flakes,oregano and pepper powder. Sauté for 2-3 minutes
  6. Add fresh cream and mix well.
  7. Add cooked pasta and toss till the pasta is coated with sauce.
  8. Keep it on medium flame for 2 more minutes and put off the flame.
Pasta with White sauce (White Colour)
