Garlic EggsWe have started a series just for egg recipes. Here, you will come across variety egg dishes or may see twist to your regular egg dishes. All the dishes are tried, tested and are foolproof. We all know eggs are good sources of protein. It is a powerhouse of nutrients and also they keep you full for longer. They are breakfast saviours for many and always tops the list for any diet chart.

No more waiting, first up is garlic anda / eggs in garlic masala.This is a starter dish, flavoured with lots of garlic and fresh coriander. When the sharp aroma of garlic fills your kitchen, you just want to plate up and dig in.

Hard boil the eggs, peal and keep aside. Prepare a smooth paste of ingredients mentioned.

Garlic Eggs

In a small bowl, take 2 tsp of ground masala, garam masala powder, a pinch of salt and mix well. Make slits on the eggs and marinate them in the masala. Keep aside for 15-20 minutes .Heat butter and oil in a pan on low-medium heat. Add marinated eggs and fry them till they start changing colour. Remove from the pan and keep aside.

To the same pan, add cumin powder, curry leaves and sauté well. Add chopped garlic, onions – fry till the onions turn transparent.

Lower the heat, add masala paste and 1 tbsp water and fry for a minute. Close the lid of the pan and cook the masala in low flame for 3-5 minutes. Once the masala is cooked, add eggs (whole, halved, broken) and mix well with masala.

Roast on med-high flame for 2-3 minutes.Serve hot.

Ingredients
  1. Eggs 4 Numbers
  2. Onion 1 medium
  3. Garlic pods 3-4
  4. Cumin powder 1 tsp
  5. Turmeric powder 1 tsp
  6. Garam masala 1 tsp
  7. Butter 1 tbsp
  8. Oil 2 tsp
  9. Salt to taste
Masala paste
  1. Coriander leaves 1/2 cup
  2. Garlic pods 7-8
  3. Ginger 1 inch
  4. Green chilli 2 medium
  5. Peppercorns 5-6
Instructions
  1. Hard boil the eggs, peal and keep aside.
  2. Prepare a smooth paste of ingredients mentioned.
  3. Finely chop onions and garlic.
  4. In a small bowl, take 2 tsp of ground masala, garam masala powder, a pinch of salt and mix well. Make slits on the eggs and marinate them in the masala. Keep aside for 15-20 minutes
  5. Heat butter and oil in a pan on low-medium heat.
  6. Add marinated eggs and fry them till they start changing colour. Remove from the pan and keep aside.

  8. Add chopped garlic, onions - fry till the onions turn transparent.

  11. Once the masala is cooked, add eggs (whole, halved, broken) and mix well with masala.
  12. Roast on med-high flame for 2-3 minutes.
Notes
  1. 1. Making Hard boiled eggs - in a sauce pan, heat 3 cups of water. Just when they are about the boil gently drop eggs with a spoon. The eggs should be completely covered with water. Now boil the eggs for 5 on high flame, another 3-5 minutes on low flame. Put off the flame and keep the eggs covered for 10 minutes. Before pealing the shells, cool the eggs completely; If needed give them a ice bath.
  2. 2. For the masala, we are using green chilli and peppercorns, you can just use any one of them.
