A simple omelette paired with simple aromatic gravy. This deliciously rich omelette curry is very hard to resist. Omelette chunks dunked in rich tomato gravy is such a brilliant hit! This super dish is worth all your hard work.
Prepare the omelette and keep it aside. Roughly chop onions and tomatoes . And set all the ingredients.
In a pan, heat oil Fry dry ingredients till fragrant on low-med heat.
Add onions and fry for 2 minutes.When onions turn brown, add tomatoes and fry till its soft and mushy.Finally add coconut and toss for a min or two on high flame.

- Eggs 3
- Onion 1 medium
- Green chilli 2 medium
- Coriander leaves a small bunch (optional)
- Turmeric powder 1 tsp
- Milk 1 tbsp (optional)
- Salt to taste
- Oil/butter 2 tsp
- Coriander seeds 1tbsp
- Cumin seeds 1tsp
- Fennel seeds 1/4 tsp
- Onion 2medium
- Tomato 1 medium
- Curry leaves 2 strand
- Grated coconut
- Cinnamon stick 1/2 inch
- Red chilli powder 1tsp
- Coriander powder 1tsp
- Turmeric powder 1/2 tsp
- Salt to taste
- Oil
- Finely chop onion, chilli and coriander leaves.
- In a bowl mix all the ingredients except oil.
- Beat the mixture well until smooth and frothy.
- Heat a non-stick pan and add oil/butter.
- When the oil is hot, pour the mixture into the pan.
- When it is cooked on one side, gently flip to the other side and cook.
- Switch off the flame. Roll the omelette and cut into slices and keep ready to be used in gravy.

- 1. Omelette should be cooked on med-high flame. Omelette won't be cooked and will be burnt.
- 2. To the green gravy base, roast and paste the following ingredients: green chilli, Coriander leaves, onions, tomatoes, coconut.
- 3. Instead of omelette, the gravy can be a base to boiled eggs, potatoes and paneer.
