Prepare the omelette and keep it aside. Roughly chop onions and tomatoes . And set all the ingredients.

Omelette
  1. Eggs 3
  2. Onion 1 medium
  3. Green chilli 2 medium
  4. Coriander leaves a small bunch (optional)
  5. Turmeric powder 1 tsp
  6. Milk 1 tbsp (optional)
  7. Salt to taste
  8. Oil/butter 2 tsp
Gravy
  1. Coriander seeds 1tbsp
  2. Cumin seeds 1tsp
  3. Fennel seeds 1/4 tsp
  4. Onion 2medium
  5. Tomato 1 medium
  6. Curry leaves 2 strand
  7. Grated coconut
  8. Cinnamon stick 1/2 inch
  9. Red chilli powder 1tsp
  10. Coriander powder 1tsp
  11. Turmeric powder 1/2 tsp
  12. Salt to taste
  13. Oil
Omelette
  1. Finely chop onion, chilli and coriander leaves.
  2. In a bowl mix all the ingredients except oil.
  3. Beat the mixture well until smooth and frothy.
  4. Heat a non-stick pan and add oil/butter.
  5. When the oil is hot, pour the mixture into the pan.
  6. When it is cooked on one side, gently flip to the other side and cook.
  7. Switch off the flame. Roll the omelette and cut into slices and keep ready to be used in gravy.

Notes
  1. 1. Omelette should be cooked on med-high flame. Omelette won't be cooked and will be burnt.
  2. 2. To the green gravy base, roast and paste the following ingredients: green chilli, Coriander leaves, onions, tomatoes, coconut.
  3. 3. Instead of omelette, the gravy can be a base to boiled eggs, potatoes and paneer.
