Do you love Egg Bonda?? I had my first ever egg bonda from a bajji shop outside my office, roughly around 8 years ago. He would make varieties of bajji and bonda.It actually took me a while to taste this one. he would dip boiled eggs in the bajji batter.
(Basically batter made from gr am flour) and fry; Then serve it with some onions and magical green chutney. It was yummy and filling.
Now, after all these years, I set out to make egg bonda – exclusively for the eggzotic series. And how, made it better. The egg yolks are separated after they are boiled, spiced and filled back, sealed together, and fried. You can just dip the egg in the batter and fry it, if you don’t want take the pain; But, what’s the fun right! a little effort is all that it takes and scrumptious snack will ready in your plates. Go for it!
Steps:
Cut the eggs in half lengthwise, gently separate the yolk from whites. Finely chop onions, green chilli and coriander leaves.Prepare a thick batter from the ingredients mentioned.In a bowl, mix together yolk, onions, green chilli, coriander leaves, chilli powder, turmeric powder, jeera powder, salt and lime juice.Add cream and mix well. if you want crumbly texture, then skip cream.
Take one half of the egg and spoon the mixture into it. seal it with other half and prick a toothpick across it to hold the eggs together. repeat the steps for all the eggs.
Now gently dip the egg in the batter and drop it in hot oil. fry the eggs till golden brown on low-med flame.
- Hard boiled eggs 3
- Onions a small half
- Green chilli 1 small
- Coriander leaves 2 tsp
- Red chilli powder 1/2 tsp
- Turmeric powder 1/2 tsp
- Cumin/jeera powder 1/2 tsp
- Salt to taste
- Lime juice 2-3 drops
- Fresh cream 2 tsp
- Oil to fry
- Gram flour 1 cup
- Red chilli powder 1 tsp
- Turmeric powder 1 tsp
- Ginger garlic paste 2 tsp
- Salt to taste

- Prepare a thick batter from the ingredients mentioned.
- In a bowl, mix together yolk, onions, green chilli, coriander leaves, chilli powder, turmeric powder, jeera powder, salt and lime juice.

- Heat enough oil in a pan for deep frying on low flame.
- Meanwhile assemble the eggs.
- Take one half of the egg and spoon the mixture into it. seal it with other half and prick a toothpick across it to hold the eggs together. repeat the steps for all the eggs.
- Now gently dip the egg in the batter and drop it in hot oil. fry the eggs till golden brown on low-med flame.
- Remove the eggs into a absorbent paper.
- 1. Separate the yolks carefully, as the delicate egg whites may break in the process.
- 2. To the yolk mixture, you can also add mayonnaise, butter or milk.
- 3. If you do not like egg yolks, make the filling with grated paneer. Make the filling as said above replacing yolks with paneer.
- 4. Instead of gram flour batter, you can make batter from whole eggs. to make this, in a bowl beat 2 whole eggs with little salt and pepper. Dip the eggs in this mixture, coat it with breadcrumbs and fry. [Haven't tried it, but you re free to experiment.]
