Creamy Eggs

A simple creamy egg recipe that will go very well with rice and roti, both. The recipe is named Creamy Eggs because there is cream in it, yes!

The base is our classic onion tomato gravy, spiced up with dry masala powders. So, I present to you this easy egg recipe to relish, enjoy it.

Steps:

On medium flame, heat 2 tsp oil in a pan Add a pinch of red chilli powder, turmeric powder, garam masala powder and salt. Slit the eggs and slide into the pan. Fry lightly. Remove the eggs from the pan and keep aside . To the same pan, add remaining oil . Once the oil is hot, add cumin seeds,ginger garlic paste,green chillies and curry leaves and sauté it. Add onions and fry till they turn light brown .

Creamy Eggs

Add finely chopped tomatoes or pureed tomatoes and mix well. Fry for a minute. Close the pan and let the tomatoes cook well, till the oil starts separating. Add dry masala powders, salt and mix well. Add fried eggs and mix well.

Ingredients
  1. Hard boiled eggs 3
  2. Onion 1 medium
  3. Tomato 2 medium
  4. Green chilli 2 small
  5. Curry leaves 1 strand
  6. Cream 1 tbsp
  7. Cumin seeds 1/2tsp
  8. Red chilli powder 1tbsp
  9. Coriander Powder 1 tbsp
  10. Mango Powder(Amchoor) 1 tsp
  11. Ginger garlic paste 1tsp
  12. Turmeric powder 1/2 tsp
  13. Garam masala powder
  14. Salt
  15. Oil 1 tbsp
  16. Coriander leaves
Instructions
  1. On medium flame, heat 2 tsp oil in a pan .
  2. Add a pinch of red chilli powder, turmeric powder, garam masala powder and salt.

  10. Add dry masala powders, salt and mix well. (Add little water if the masala is too dry)
  11. Add fried eggs and mix well.
  12. Sprinkle coriander leaves and switch off the flame.
  13. Finish with fresh cream and give a gentle stir. Server hot with rice or roti.
