Pathrode

A coastal delicacy made with colacassia leaves, abundantly found during the monsoon.
This traditional recipe involves coating spiced rice batter to the leaves and arranging them one above the other, like a stack, nearly rolling them to a cylindrical shape and steam. Cut  into slices and fry on hot pan with generous helping of coconut oil.

Pathrode

Ingredients For Batter

  • Dosa Rice 3/4 cup
  • Coriander seeds 1tbsp
  • Cumin Seeds 2tbsp
  • Urad dal 2tbsp
  • Dried Red Chilly 7 to 8 (According to spice level)
  • Turmeric 1 tsp
  • Curry leaves
  • Grated coconut 2 tbsp
  • Tamarind pulp 1tbsp
  • Jaggery
  • Salt
  • Oil (Coconut oil preferred)

  • Colacassia Leaves

Steps

Soak Rice and Urad dal for 3 to 4 hours. Grind all the ingredients mentioned in “Ingredients For Batter” section and prepare a smooth thick batter. Wash colacassia leaves and pat dry. Remove the stem & the large veins from the leaves. Take a large size leaf,  apply the coating of batter on the back side of the leaf. Place another leaf on this and apply the batter again. Repeat this for 3 to 4 leaves.

Fold the sides to the centre and roll it to a cylindrical shape.Cut into slices.

Heat a dosa pan and apply coconut oil, roast the slices for 30 minutes in low flame. ( approximately 15 minutes each side).Alternatively you can steam the rolls for 30 minutes then cut into slices and roast it on pan.
